The Story Behind Family Meal

At Lazeaway Club, the dishes that mean the most often come from closest to home. This February, we're turning the spotlight inward as our culinary team, led by Food Network's Chef Chris Ricketts, shares the recipes that shaped their journeys in food.

"We've done a series of successful pop-ups with chefs from across the country over the last couple of years," says Chef Ricketts. "For this pop-up, I wanted to turn the spotlight on our creative team within our kitchen."

From Mumbai street food to El Salvadoran pupusas, each dish on our limited-time menu carries a personal story. These are the meals that remind our chefs of family gatherings, after-school adventures, and the moments that inspired their culinary paths.

Meet Our Chefs & Their Stories

Chef Chris Ricketts & Chef Elizabeth Bossy

Together, this culinary power couple brings their combined expertise and family traditions to Lazeaway Club. Their Pork Pozole Rojo, a rich stew topped with bone marrow, lime, cilantro, and avocado, represents the perfect blend of their shared passion. It's a dish Chef Chris regularly prepares for staff meal, perfected by Chef Elizabeth into what he calls an unparalleled version.

Mohammed Yousha

Lead Line Cook Mohammed brings the vibrant street food culture of Mumbai to our kitchen. His Vada Pav - a spiced potato fritter served on a housemade sweet roll with tamarind and red chili chutneys - captures the joy of after-school snacks with friends. His Makhani Butter Chicken tells another chapter, reflecting his renewed passion for his cultural cuisine.

Salvador Munguia

Chef Sal's pupusas tell a story of resourcefulness and tradition from his native El Salvador. Made with loroco, a local flower his family would forage when meat was scarce, these pupusas honor both his heritage and the creative spirit of his upbringing.

Elizabeth Solano

A pastry veteran of Sonoma County, Elizabeth's desserts bridge rustic tradition and fine dining finesse. Her churros celebrate the beauty of simplicity, while her tres leches cake showcases her technical mastery - together representing the dual nature of her culinary journey.

Justin Sweet

Chef Justin's Sweet Plantain Fritters tell a story of cherished moments in his grandmother's San Francisco kitchen. Drawing from two decades of industry experience, he's elevated her beloved tradition of frying sweet plantains with cotija cheese into delicate fritters with Oaxacan cheese, paired with a fresh salad. Now a favorite snack of his children, this dish bridges three generations - from his grandmother's cast iron skillet to his kids' dinner table, carrying the warmth of family memories in every bite.

Celia Rosas

Born in 1932 in Huatambampo, Sonora, Mexico, Celia's culinary legacy lives on through her family's treasured recipes. While raising her family in Las Vegas, she not only nourished her grandchildren with traditional dishes but also shared her cooking with her community through St. Christopher Bazaar, her local parish.

CARLOS BARBOSA ROBELEDO

Chef Carlos's Aguachile is a heartfelt tribute to his Mexican roots, where vibrant colors and bold chiles come together to tell a story. For Carlos, this dish represents the essence of Mexican cooking - colorful, flavorful, and always centered around the chile pepper, an ingredient that defines his cultural identity. Each plate is thoughtfully composed to showcase the bright, fresh elements that make Mexican cuisine so distinctive, bringing a piece of his heritage to our menu.
